It disperses well , low in viscosity, it provides excellent nutritional properties. It is produced and designed for use in meat industry by injection in brine system. Whole muscle meat products (Ham etc) can be improved by using soy protein brine injection & massage & tenderization to tenderize and reduce cooking losses.
