Description Neutral Protease UTC-A5 is proteolytic enzyme obtained by the modified Aspergilus oryzae and submerged fermentation as well as special post-treatment process using proprietary technologies. It is used for malt protein decomposition during beer saccharification. By improving the level of α-amino acid, Neutral Protease UTC-A5 stabilizes fermentation process, avoid turbidity caused by temperature variations, enhance biological stability and extend beer shelf life. Activity Protease activity: ≥50,000 U/g, Definition of enzyme activity: the amount of enzyme required releasing 1 μg/ml of L-tyrosine equivalent from casein by 1g enzyme per minute under specific temperature and pH is defined as one unit (U). Neutral protease is analyzed at 30 oC and pH 7.5. Properties Effective pH range: 4.0~7.5 and the optimum pH is 7.0 Effective temperature range: 30~55℃ and the optimum temperature is 45℃ Application . l The product can be directly put into mash tun or firstly dissolved it by saccharifying water at 20-50℃, then mixed into mash tun. Package 20kg/barrel,1kg/bag inside the barrel. Storage and Shelf life The product is recommended to be stored in seal and dry with low temperature (≤20℃), cool storage（4-8℃) is preferred. The product is valid for 12month if stored in the regulated condition. Safety and handling The barrel should be sealed tightly after use, avoiding be affected with damp or contamination. Inhalation of enzyme dust and mists should be avoided. In case of contact with the skin or eyes, promptly rinse with water for at least 15 minutes.
