Description UTC-500 is a blended product with β-glucanase, neutral protease, cellulase, xylanase, amylase and other single enzymes, which is obtained by submerged fermentation and extraction. This enzyme is specially designed for barley saccharification process. Mechanism Βeta-glucanase, one of UTC-500 components, decomposes glucosidic bond of β-1, 3 and β-1, 4 glucans, and hemicellulases hydrolyze pentosan chains of malt, producing viscous cellodextrin, cellobiose and laminaribiose. Meanwhile, synergized with cellulase, these enzymes disrupt malt cell wall structure, release effective nutrients, and increase the contents of extracted substances from wort. Protein will also be hydrolyzed by protease to amino acid, and wort α-amino nitrogen concentrations are improved substantially.Functionsl Decrease wort viscosity, increase filtration rate and wort clarity. Improve brewing ability by increasing the level of wort α-amino nitrogen and fermentable materials. Eliminate cold turbidity and extend shelf life.
