Function and characteristics It can hydrolyze α-1,4 glycosidic linkages of the starch. Starch molecule is randomly hydrolyzed into different length of short chain dextrin and small amount of low molecular weight sugars. Both amylose and amplopectin can be randomly hydrolyzed, resulting in the rapid decrease of the viscosity of starch solution. The process makes the starch to be liquefied, so the medium temperature α-Amylase is also called liquefying enzyme.
