It consists of relatively high gluten content and plays as functional protein due to its good water absorption capacity and viscoelasticity of formed dough when hydrated. Specification: Item Moisture : 5.5% Ash (On dry basis) : 0.68% Protein (On dry basis N x 5.7): 76.8% Water absorption rate (On dry basis): 168% Fat: 0.87% Particle size: 98.6% pass through 200 micro screen Taste and Smell: Normal Taste, Grain Sweet Smell Appearance: White Yellow Flowing Powder Main Application: Vital wheat glutein is widely applied in bakery, fast and convenient food, meat replacer, pet food and aquatic feeds. Packing: Vital wheat glutein is packed in net weight 25kgs multi-ply craft paper bags or 850kgs/1000kg bulk bags. Storage: Stored in a cool, dry, ventilated area. Shelf Life: 1 year in dry conditions after production. GMO Status: GMO free.
