1. Chemical name: MONOCALCIUM PHOSPHATE ,DIHYDROCALCIUM　PHOSPHATE 2. Molecular Formula : Ca（H2PO4）2•H2O 3. Molecular Weight: 252.07 4. Character: White crystalline powder or flaky crystal. The specific gravity is 2.220. If heated to 100℃,it will lose crystal water. It is soluble in hydrochloric acid and nitric acid , slightly soluble in water(1.8﹪). It usually has dissociative phosphoric acid and is hygroscopic. Its aqueous solution presents as acidic property (PH±3). 5. Usage: In food industry, it is used as swelling agent ,dough regulator ,buffering agent, modifier, firming agent, nutritional supplement, chelanting agent. Such as bulking for baked products and cakes. It is also used as leavening agent, buffer or jellies, curing agent for making bread and biscuits. And as tissue improver for fermented meat. When used in brewing, it can enhance the saccharifying power and ferment ability. 6. Packing: It is packed with polyethylene bag as inner layer, and a compound plastic woven bag as the outer layer. The net weight of each bag is 25kg. 7. Storage and transportation: It should be stored in a dry and ventilative warehouse, kept away from moisture and hot. Unload with care as to avoid damage.
