Detailed Description
Introduction: Handary natamycin series are a natural polyene macrolide antifungal produced by fermentation of the bacterium Streptomyces natalensis. It is one of the most effective natural preservative to inhibit the growth of moulds and yeasts. This results in prevention of fungal growth that can reduce economic losses due to spoilage. It can also improve food safety by protecting against mycotoxin production. Handary Natamycin series include: 95% Natamycin; Natalac-50% Natamycin standardized with lactose dairy for dairy and cheese; Natanacl-50% Natamycin standardized with NaCl for meat processing; natadex-50% Natamycin standardized dextrose for wine and juice . Quality standards:Handary Natamycin Series are registered with USA FDA and certified HALAL (Moslem) & KOSHER (Jewish) accreditation. Characteristics: -no migration into the foodstuff when applied on the surface, thus limiting the concentration -cost-effective solution due to high efficacy at low concentrations -possible usage in fermented products due to no action against bacteria -allowing new formulation due to not needing low pH to be effective -little or no influence on taste, flavour, colour of foodstuff -extra safety for consumer due to no reported allergic or sensory reactions -reduction of supply chain and distribution costs -replacement of chemical preservatives by a natural and safe solution Applications: Handary Natamycin Series can be used on the surface treatment of cheeses, surface treatment of dried and semi-dried cured meat products, yoghurt, sauces and toppings (including mayonnaises and salad dressings), wines and fruit juices. As a food additive, its maximum level is 15 mg/kg in each of the food categories Packages: 5kg, 20kg or packed to customer's requirements. Shelf life: Two years in cool (0-20°C), dry conditions, away from direct sunlight in original unopened packs. Natamycin should be stored in glass, plastic or stainless steel containers. Heavy metals, such as lead and mercury, will adversely affect the stability of Natamycin.
